广西水产品地理标志产品品质分析OA北大核心CSCDCSTPCD
Quality Analysis of Aquatic Products of Geographical Indication in Guangxi
对广西申请地理标志的桂平黄沙鳖、官垌草鱼、全州禾花鱼和钦州近江牡蛎品质进行分析。采用国家方法考察蛋白质、脂肪、钙、铁、锌等指标。结果表明：黄沙鳖蛋白质含量最高为20.8g/100g,近江牡蛎蛋白质含量最低为9.2g/100g;黄沙鳖脂肪含量最低为0.3g/100g,而其他品种脂肪含量水平相当;近江牡蛎的钙、锌和铁均最高,尤其是锌含量为1055.6mg/kg;禾花鱼钙含量高于黄沙鳖和官垌草鱼;官垌草鱼铁和锌含量最低,分别为5.0mg/kg和4.1m…查看全部>>
The quality characteristics of aquatic products of geographical indication in Guangxi autonomous region,such as Guiping sand turtle,Guandong grass carp,Quanzhou Chinese ink carp and Qinzhou Crassostrea rivularis were analyzed by determining the contents of protein,fat,Ca,Fe and Zn.The results demonstrated that among the four species of aquatic products,Guiping sand turtle contained the highest protein content of 20.8 g/100 g compared with the lowest of 9.2 g…查看全部>>
