Abstract
The removal curve and ways of cholesterol of two Lactobacillus acidophilus strains were investigated, and the effect of different culture conditions on cholesterol reduced by two strains were also studied in vitro. Both of two strains showed a significant a-bility to reduce cholesterol. Which was due to both bacterial assimilation and precipitation of cholesterol, mainly bacterial assimilation; as inoculation amount increased, the reduction rate increased! The effect of various bile salts on cholesterol reduction were different, the maximum amount of cholesterol reduction could be reached when the addition of bile salt was 0. 2 % ( m/V); the effect of cholesterol reduction was best when the dosage of 0.1 %tween 80.关键词
