摘要

Abstract

The effect-of different aging treatment was studied on walnut peroxide value, carbonyl value, saponification value, iodine value and other chemical indicators. By statistical analysis on the mmulti-ple sets of data, model equations of freshness on physical and chemical indicators of walnut were built. The result showed that peroxide value, carbonyl value and saponification value of walnut trend to increasing with storage time and aging time added. SPSS software was applied in data fitting and the mathematical model on freshness of walnut based on physical and chemical indicators above was get, that might was applied to determine freshness of walnut for consideration.
