摘要

Abstract

The pigment was extracted from rapeseed flowers by the ultrasonic - assisted extraction technology. The effects of pH, sunlight, temperature, oxidants, reducing agents and some metallic ions on the stability of the pigment were studied. The results showed that pH, oxidants, reducing agents and metallic ions had little effect on the stability of pigments, they even showed some degree of enhancing the color. However, the stability of pigment was sensitive to sunlight and temperature.
