摘要

Abstract

Animal products, which are one of the crucial raw materials, can improve human nutrition and living standards. Animal products processing plays an important role in promoting transformation and value-adding of the animal products, ensuring quality and safety, and reducing environmental pollution. In the past 60 years, animal products processing has made great progress in science and technology in China. To promote its further sustainable development, it is important to summarize the achievements, analyze the existing problems, and comparatively introduce the experience and development trend of the developed countries. The main breakthroughs of scientific and engineering technical problems are addressed in animal products processing field, which is of certain significance for the future direction in this field, expecting to inspire the illumination of researchers in the related fields.
