Research Progress of Sugar Metabolism in the Process of Post-harvested Apple Softening
摘要
Abstract
The fruit ripening and softening of apple is a complex physiological process,which is regulated by a number of factors.Metabolic change of cell wall polysaccharides during softening and its important role in regulating fruits' softening physiology were analyzed.Metabolic changes of soluble sugar and starch played a crucial role not only in the formation of fruit flavor quality,but also in cell turgor pressure maintenance,and may be another key reason for fruit softening.关键词
