摘要
Abstract
Sterilization is an important procedure in food processing. The effect of sterilization has a direct influence on food safety and healthy,The traditional sterilization technology will have a side effect on the value and flavor of food. Pulsed electric field(PEF) sterilization technology is widely used in food processing for affectivity, rap-idness, safety and low consumption. This paper summarizes the development of high voltage pulsed electric field sterilization technology both at home and aboard, including high voltage pulse generator, treatment chamber, influence of sterilization system and its application.关键词
