Abstract

Objective: To Analyze the chemical components of Yunnan 'Zijuan' sun-dried green tea and Daye sundried green tea. Methods: The regular ingredients, phenolic constituents and aroma compounds of Yunnan specific' ZiJuan' sun-dried green tea and regular Daye sun-dried green tea were determined. Results; The total ash content, total water soluble carbohydrates, polysaccharide, protein and amino acid of these two kinds of tea were almost similar, the content of Fe and Mn minerals of 'Zijuan' sun-dried green tea were 1.25, and 1.15 times higher than regular Daye sun-dried green tea, respectively. The content of S minerals of regular Daye sun-dried green tea was 2.83 times higher than'Zijuan' sun-dried green tea, and the contents of Leucine, Tyrosine and Arginine of 'Zijuan' sun-dried green tea were higher than regular Daye sun -dried green tea. The contents of polyphenols, proanthocyanidins, anthocyanin, theabrownin and total catechin were 21.83%,20.23%,1.16%,2.38% and 7.25%, respectively, which were 5.03%,2.47%, 1.16%,0.85% and 0.88% higher than regular Daye sun-dried green tea. The compositions of catechin monomers of both kinds were also different. The contents of alcohols, aldehydes of aroma continents of 'Zijuan' sun-dried green tea were 5.18%, 4.15% higher, and the esters, carboxylic acid were 3.00%,3.29% lower than regular Daye sun-dried green tea. Conclusions: The results indicated that the chemical components of Yunnan 'ZiJuan' sun-dried green tea and Daye sundried green tea were different.
