摘要

Abstract

Objective to determine the optimum technical conditions for preparing selenium exopolysaccharides (EPS) produced by lactic acid bacteria. The range of reaction temperature, time and dose of selenium agent were defined through single-factor experiment and the optimal selenium modification conditions were ascertained by response surface methodology. The results showed that the selenium modification degree has been influenced by the temperature, time and dose of selenium agent obviously. When the temperature was 50 ℃, reaction time was 13.5 h and the dosage of selenium agent was 0.55 mg, the selenium content and conversion of EPS produced by lactic acid bacteria reached 168.744 μg/g and 32.01% respectively. The total antioxidant capacity and -OH scavenging capacity of Se-EPS were significantly enhanced, but ·O2- scavenging capacity had no obvious change.
