富硒花生中含硒蛋白的提取及其抗氧化性的研究
The extraction of different solubility protein in selenium enriched peanuts and the analysis of their antioxidant activity

Abstract
The dry defatted selenium enriched peanuts (SP) powder (0.3147ug/g) had a 2.5- fold higher mean total selenium concentration than general peanuts (GP) power (0.1233ug/g).The extraction of protein was 23.39% of peanuts, alkali soluble protein was the main component of protein in SP, it accounted 92.82% for total soluble protein,and it combined 77.33% of selenium in total protein.In different solubility protein extracts from SP,watersoluble protein extracts had higher DPPH free- radical scavenging activity, higher reducing activity and longer induction time than other protein extracts, it could be largely explained by its selenium concentration.关键词
