Effect of different antistaling agent on the storage quality of sea urchin
摘要
Abstract
To determine the effect of different antistaling agent on changes of storage quality of sea urchin(Hemicentrous pulcherrimus),which was processed with chitosan oligosaccharide,trehalose and EDTA-2Na,were evaluated through a systematic study of sensory quality,the total bacterial count,total volatile base nitrogen(TVB-N) and pH during storage in(4±1)℃.Results indicated that the storage quality of sea urchin gonads processed with all the three antistalingagent were improved in varying degree,while sea urchin gonads processed with chitosan oligosaccharide had a harder texture(P0.05)and better controlled rise of TVC(P0.01) and TVB-N(P0.01) values,with extended shelf life of 4~5 days;those processed with trehalose and EDTA-2Na had slightly improved storage quality with extended shelf life of 1~2 days.关键词
