摘要

Abstract

To determine the effect of different antistaling agent on changes of storage quality of sea urchin(Hemicentrous pulcherrimus),which was processed with chitosan oligosaccharide,trehalose and EDTA-2Na,were evaluated through a systematic study of sensory quality,the total bacterial count,total volatile base nitrogen(TVB-N) and pH during storage in(4±1)℃.Results indicated that the storage quality of sea urchin gonads processed with all the three antistalingagent were improved in varying degree,while sea urchin gonads processed with chitosan oligosaccharide had a harder texture(P0.05)and better controlled rise of TVC(P0.01) and TVB-N(P0.01) values,with extended shelf life of 4~5 days;those processed with trehalose and EDTA-2Na had slightly improved storage quality with extended shelf life of 1~2 days.
