摘要

Abstract

Pulsed light (PL) for inactivating polyphenoloxidase (PPQ) was studied.The Influence factors were light influence,number of pulsed and the liquid thickness.The results showed that the activity depletion was strongly dependent on the evaluated factors, mainly number of pulsed and the conditions were light intensity 0.89J· cm-2, the liquid thickness 1.56mm, conditions,inactivation values for PPO achieved 38.2%. quid thickness.
