摘要

Abstract

An experimental study for preparation of high-quality dietary fiber made from sweet potato residue by cellulose enzyme was carried out.An orthogonal test was designed based on the single factor experiment which effect the yield of the soluble dietary fiber.The optimal conditions for preparation of high quality dietary fiber were obtained,such as the temperature was 45℃, pH5.0,the quantiiy of cellulose enzyme was 20U/g, and action time 2.5h. Under these conditions,the yield of soluble dietary fiber increased from the original 4.2.6% to 20.91%.
