摘要
Abstract
1 ,1-Diphenyl-2- picryl- hydrazyl （DPPH） was a stable free radical which was synthesized and had an unpaired valence electron at one atom of nitrogen bridge.It had been extensively applied in screening and evaluation of antioxidants in various biomass because its structure was simple and the reaction of it was easy to control.This article elaborated assay methods （spectrophotometry, electron paramagnetic resonance, electrochemistry and HPLC）, principles and application properties about DPPH scavenging capacity of various antioxidants.关键词
