酶法合成共轭亚油酸单甘酯的研究

Abstract
Monoacylglycerols enrich conjugated linoleic acid were produced using Penicillium lipase(G50)catalyzed glycerol with CLA.The esterification reaction was carried out in a solvent-free system.The effects of molar ratio of substrates,enzyme dosage,water content,reaction temperature and reaction time were evaluated.The results showed that the optimal reaction conditions were as follows:the mole ratio of glycerol to CLA 4:1,enzyme dosage 300U/g,water content in the system 1%,reaction temperature 15℃,reaction time 24h.Under the optimal conditions,the esterification rate was 84.98%,the MAG and DAG content in the finished product were 68.40% and 16.58% respectively.Through the analysis of the fatty acid composition of product,Penicillium lipase G50 was found no separation effect of CLA isomers.关键词
