Effect of Modified Atmosphere Package with Different Gas Components on Egg Preservation

Abstract
In order to extend the storage period of eggs,the effect of modified atmosphere package(MAP) with different gas components on egg preservation at room temperature(25 ℃) was explored.The results showed that when eggs were stored in MAP with the gas compositions of 50% CO2,7%-11% O2 and 39%-43% N2,the weight loss rate and albumen pH of eggs remained at a relatively low level,and haugh unit and albumen gel-strength were kept at a relatively high level.The eggs stored in MAP were AA degree,whereas the control group without MAP were B degree after 30 days storage.This study provides theoretical and technological basis for egg fresh-keeping strategy and storage.关键词
