摘要

Abstract

Response surface methodology was applied to optimize process conditions of soluble dietary fiber extracted by ultrasonic method. Five factor, namely ultrasonic time, ultrasonic temperature, solid-liquid ratio, enzyme additive amount and ultrasonic power were selected. Base on single-factor experiments, soluble dietary fiber yield was as response value, and the effect of such factors on soluble dietary fiber yield was studied. The results showed that soluble dietary fiber yield can reach the highest level of 23.83% when follow this process conditions: solid-liquid ratio was 16:1, ultrasonic time was 25 min, ultrasonic temperature was 50 ℃, enzyme additive amount was 0.5% and ultrasonic power was 450W.
