摘要

Abstract

With the variety of Heritage raspberry as experimental material,the effect of CO2 concentration on quality of raspberry stored in gas adjustment box was studied by analyzing the concentration of O2 and CO2 in the box,sensory quality and biochemical changes on the fruit during storage.Results showed that it had some impact on storage effect by artificial filling different concentration of carbon dioxide,the treatment of 5% CO2 perform smaller changes in CO2 and O2 level,the increase of PPO activity and MDA accumulation were inhibited,the POD activity of rubus maintained at relatively high level.There were almost no change on color,aroma faded slightly,and only individual fruit surface had sporadic drops of water after stored for 40d.The results suggested that the treatment of 5% CO2 would be promising method for stored in gas adjustment box,and quality maintaining of raspberry.
