红曲色素TY的稳定性研究
Research of stability of monascus pigment TY
摘要
Abstract
Monascus pigment is a natural and safe food coloring. It is extensively used in food industry. This paper was focused on the influence of illumination, temperatures, pH, metal ions (Cu2+, Caz+ , Mg2+ , K+ and Na+ ) and food additives (acidity regulator, sweeteners, preservatives and antioxidants). On monascus pigment TY. The results showed that the solution of monascus pigment TY was sensitive to the sunlight. However, it was not sensitive to room light; it also had good in high temperature. When pH <4, the precipitation was and the color of solution was became darker. When pH > 5 , no precipitate was and solution was bright. Metal ions have little influence on the solution except Fe2+and Cu2+which caused precipitation, s (citric acid, acetic acid, malic acid, lactic acid, tartaric acid) were also caused precipitation and the color of the solution became darker.关键词
