摘要

Abstract

The aim of this paper was to investigate the effect of barrel temperature,moisture content and Specific Mechanical Energy(SME) on Sectional Expansion Index(SEI) of wheat starch extrudates. Wheat starch, which was collected from market,was extruded with a Brabender DSE-25 twin-screw extruder. The relationships between barrel temperature,moisture content and SEI were analyzed using statistic methods of regression analysis and variance analysis. The result showed that when temperature was at the range of 160-210℃ and the moisture content was 17%,the average,range,and Cofficient of Variation(CV) of SEI were 5.18,2.91-8.67 and 39.38% separately. When moisture content was at the range of 15%-23% and temperature was 210℃,the average,range,CV of SEI was 2.10,1.13-2.91 and 36.67%. Barrel temperature and moisture content were related very well with SEI through linear equation and quadratic equation,and the equation determination coefficient were 0.909 and 0.673,respectively. It was concluded that the effect of barrel temperature and moisture content on SEI were significant.
