Abstract
Application of ozone in preservation of fresh-cut fruits and vegetables was reviewed,including the mechanism and the factors affecting preservation and the combination of ozone and other preservation technologies in preservation of fresh-cut fruits and vegetables. Some problems and prospect of the application of ozone in fresh-cut fruits and vegetables were analyzed.关键词
