人们对天然、营养等观念的推崇,导致生鲜果蔬的消费量日渐增加。为确保生鲜果蔬采后的安全性,目前超声波作为一种物理的辅助手段逐渐受到重视。本文从超声辅助果蔬安全保障的机理入手,就超声在关乎果蔬流通安全的病原菌、病毒、农残、清洁度等方面的作用进行了综述,最后对超声技术在果蔬采后处理上的应用前景进行了展望。
