摘要
Abstract
Gac(Momordica cochinchinensis Spreng),a bitter gourd species of Cucurbitaceae.It has gained extensive attention due to its rich lycopene,beta-carotene,lutein and other functional ingredients.In this article,Gac plant properties,content,distribution,structure and physiological functions,extraction process and stability of carotenoids are reviewed.Meanwhile,the current research progress and problems are also discussed.关键词
