摘要

Abstract

The progress of proteomics technology was reviewed in this paper. The application of proteomics tech- nology to analyze the response of lactic acid bacteria to environmental stress was also summarized. The predominant environmental stress factors influencing the physiology of Lactic acid bacteria including acidity stress, cold stress, bile salt stress, osmotic stress and oxidative stress were discussed. Development and future direction were also suggested for proteomics technology in the field of molecular biology, especially in lactic acid bacteria molecular biology.
