摘要

Abstract

Odor fingerprint technology provides a quick, non-destructive and accurate way for quality inspection of aquatic products by determining the volatile components and analyzing characteristic odor substances in samples. This work reviews the three components in odor fingerprint technology, including sample handling technology, detection technology and data processing technology. The application of odor fingerprint technology in freshness evaluation, shelf life prediction, flavor evaluation and safety inspection of aquatic product are introduced. Furthermore, the developments of odor fingerprint technology and its application in aquatic product in the future are prospected.
