摘要

Abstract

Gleditsia polysaccharide gum was extracted by water, followed by ethanol precipitation. The water - soluble selenide gleditsia polysaccharide gum was prepared with sodium selenite. The structure of selenide gleditsia polysaccharide gum was linked by (3 - glycosidic and contains Se = 0 though UV and IR. The selenium mass fraction in selenide gleditsia polysaccharide gum was 38. 4mg/g by ICP. The selenide gleditsia polysaccharide gum had good thermal stability though DSC. The antioxidant activity was evaluated by two antioxidant assays including 1, 1 -diphenyl -2 -pieryl - hydrazyl ( DPPH) radical scavenging and hydrogen peroxide scavenging assay. The result showed selenide gleditsia polysaccharide gum had some effect on both. The antioxidant activity was linear with concentration. The scavenging rate was 46. 4% towards DPPH at the concentration of 3. 02mg. mL-1. The scavenging rate was 77. 7% when the hydrogen peroxide concentration was 2. 02mg μ mL-1.
