Abstract
There are not only macronutrients like carbohydrates, protein, fat and micronutrients like mineral elements, vitamins, but also phenolics and other antioxidant components, carotenoids, tocopherols, lignans, arabinoxylan, and β-Glucan and other non-starch polysaccharides, sterols and phytieaeid and other physiologically active components in the grains. In the background of Global Whole Grain Food Campaign, it has been a new task in food processing field to deep study the bioavailability of bioactive components in major grains in China, to develop high-quality whole grain food and to improve people's health by increasing the intake of whole grain food. This article has summarized progresses and prospects of the research of bioactive components in grains.关键词
