γ辐照对茯砖茶品质的影响研究
Study on effect of γ irradiation on quality of Fuzhuan brick-tea
摘要
Abstract
Fuzhuan brick-tea was treated with γ irradiation,followed by microbio and physicochemical property detection.The results of microbiological detection showed that 4kGy γ irradiation could kill 90% of mould.The analysis of physicochemical property showed that irradiation did not affect the release of fluoride,whereas decreased the content of polyphenols,amino acids,caffeine and increased the content water-soluble sugars and water extraction.In general,the irradiation improved sensory quality of brick-tea.关键词
