Enzymatic optimization and antioxidant activities of peptides from swine testis
摘要
Abstract
This article focused on neutral protease hydrolysis of swine testis protein for obtain antioxidant peptides.The conditions of enzymatic hydrolysis of swine testis protein for antioxidant peptides were designed and obtained with orthogonal by using the reducing power index:substrate concentration 8%,pH7.0,enzyme dosage 360U/g(fresh swine testis),temperature at 37℃ and time 90min.The reducing power of the hydrolysis of swine testis under the condition was 0.997.The IC50 of ·OH、H2O2、DPPH radical-scavenging and yolk lipoprotein were 0.47、0.56、0.86、0.42g/L,respectively.关键词
