摘要

Abstract

In order to improve the extraction efficiency of stevioside, ultrasonic and cellulose enzyme were used in stevioside extraction, and studied the impact of stevioside extraction rate. Five single factors, such as liquid material ratio, enzyme dosage, temperature, ultrasonic time and ultrasonic power, were analysised and orthogonal test was used to determine the best extraction condition. The experimental results showed that; liquid - material ratio was 12, enzyme dosage was 0. 15% , extraction temperature was 60℃, ultrasonic time was 80 min and ultrasonic power was 50W; under such conditions, the stevioside extraction rate was 12.94%. The extraction yield increased 2.90% than the water out, and this method shortened extraction time and reduced extraction temperature.
