Abstract
This paper mainly studies the different amount of propylene glycol alginate (PGA) on the stability of sour type milk drinks. Through the single factor experiment to determine the optimal amount of PGA. The best compound e-mulsifying stabilizer by orthogonal test was: PGA 0. 2% , CMC 0. 3% , pectin 0.1%, sucrose ester 0. 015% .关键词
