Hazard and Control of Bacterial Biofilm in the Meat Industry
摘要
Abstract
Bacterial biofilm is a biological phenomenon,in which bacteria adapt themselves to the natural environment for survival purposes.It is formed by the accumulation of microorganisms and their secretion.Biofilm-forming bacteria,which have very strong antibiotic,anti-phagocytic and anti-chemotactic activities,pose a huge hazard for the meat industry.Bacterial biofilm can cause an increase in the residual population of bacteria and residual bacteria cannot be eliminated by ordinary cleaning and disinfection.This paper focuses on the formation and characteristics of bacterial biofilm and its hazards for the meat industry and control measures.关键词
