摘要

Abstract

Chitosan and copper (II) ion were used as primary materials to prepare chemical modified chitosan resin complexed with copper ion (CMCR), which could be recycled. The hydrolyzing ability of CMCR was investigated through Ninhydrin Colorimetric method and SDS-PAGE electrophoresis method. The results demonstrated that myoglobin can be hydrolyzed more than 80% at physiological pH, 60 ℃ for 24 hours Copper ions ehelated on the resin hold a desirable stability, more than 98.17% copper ions still complexed with the resin after the first reaction. CMCR could be reused for 4 times while the catalytic ability maintains 85% of the original. The results conformed that CMCR is a very promising medium for hydrolyzing protein in the area of food etc.
