栉孔扇贝和海湾扇贝脂质及其脂肪酸组成分析
Analysis of Lipid Profile and Fatty Acid Compositions of Chlamys Farreri and Argopecten Irradians

Abstract
The total lipids of muscle and viscera of Chlamys farreri and Argopecten irradians were extracted using Folch method, and the lipid profile and fatty acid compositions were analyzed. The results indicated that the total lipid contents of the muscle of two scallops species were significantly lower than those of viscera, and phospholipids were the predominant lipid components in muscle, whereas triacylglycerol in viscera. Characteristics of fatty acid composition were polyunsaturated fatty acids (PUFA)>saturated fatty acids (SFA)>monounsaturated fatty acids (MUFA) in both muscle and viscera of two scallops species; n-3 PUFA was the main fatty acids and chiefly consisted of C20:5n-3(16.58%~19.00%) and C22:6n-3(11.49%~21.18%); the ratios of n-6 to n-3 fatty acids in muscle were higher than viscera, especially the levels of DHA in muscle were significantly higher than viscera. Meanwhile, six kinds of dimethyl acetals (DMA) were i-dentified in two scallops species, and were mainly C18:0 DMA(3.05%~6.89%) and C20:1 DMA(1.55%~4.25%), and the DMA levels in muscle were higher than viscera, indicating that the levels of plasmalogens in muscle were higher than viscera.关键词
