紫薯花色苷提取工艺研究
Research on the extraction methods of pigment from purple potato
摘要
Abstract
To study the extract methods and the stability of pigment from purple potato. The extraction conditions were obtained by single factor experiment,including the biggest absorption wavelength,organic solvent,solid — liquid ratios,pH value,extractive time and temperature. By solid - liquid ratio,pH value,temperature,three factors and three levels test to obtain the best extraction conditions,also the stability of pigment from purple were studied in this paper. The best extraction conditions of pigment from purple were showed as following: absorption wavelength was 531nm,the best extraction solvents was citric acid at the concentration of 5% ,the expected solid - liquid ratio was 1 :100,60℃ and 1h for extraction. The research results showed that the stability and color of pigment was vulnerable to the effects of pH values. Three factors and three level test showed that the best extractive condition is 1 : 50 solid - liquid ratio,pH 1 and 70℃. These results may serve as basis of the extraction in large scale and application in industrial production.关键词
