摘要

Abstract

ε - poly - L - lysine (ε - PL) is a basic homo - poly - amino acid,which can be produced by microbe,ε- PL is stable at both acidic and alkaline and high temperature conditions,and it has a wide antimicrobial spectrum. Besides,ε- PL is water soluble,biodegradable,edible,cationic and nontoxic. Due to these properties,ε- PL and its derivatives have a broad range of applications such as food preservatives,dietary agent,biodegradable fibers,emulsifying agent,highly water absorbable hydrogels,anticancer agent enhancer,drug carriers,biochip coatings. It used as a food preservative in Japan,South Korea,the USA,and other countries. In a certain range of concentration,carbon and nitrogen sources and some trace elements play a very important role in the growth and metabolism of microorganism as nutrient substances,a component of physiological active substance or a regulator of biological reaction. The physical,chemical and biological properties of ε - poly - L - lysine and effects of medium components,such as carbon and nitrogen sources,mineral salts,on its biosynthesis were reviewed in this paper.
