Abstract
Natural antistaling agents, such as chitosan, ozone, alginate, tea polyphenols, etc., are non-toxic, odorless, biodegradable, biocompatible, low cost and had excellent preservation effect The mechanism of natural antistaling agents for freshwater fish was introduced. The applications of natural antistaling agent for the preservation of freshwater fish were reviewed and some suggestions for natural antistaling agent development were presented.关键词
