Abstract
The electronic tongue,monitoring mammal olfaction systems,is consisted of cross sensitive sensor array, signal adjustment circuit and pattern recognition system.lt has been widely used in many areas,especially in food quality and safety as it is rapid,safe and easy to use.The application of electronic tongue in the assessment of freshness,quality and processing methods of meat and elaborated the development prospects.关键词
