Research Progress on the Application of Inductively Coupled Plasma Mass Spectrometry in Food Quality and Safety

Abstract
This paper reviewed the latest research progress on the application of inductively coupled plasma mass spectrometry (ICP- MS) in food quality and safety since 2008. The applications of ICP-MS in the analysis of heavy metal residues and speciation, rare earth elements and nutritional elements in food, heavy metals in food packaging and contact materials, food additives and illegal additives were summarized.关键词
