ROL酶解制备富含甘油二酯的大豆油工艺的优化
Optimization for diacylglycerols-enriched soybean oil production by enzymatic hydrolysis with lipase ROL

Abstract
Three lipases (RML, ROL, and ALIP) were used for producing diacylglycerols (DAGs) from soybean oil and optimized the reaction conditions. The results showed that, ROL had the highest ability for producing 1, 3-dilinolein with the highest yield of 16.78 wt %. Subsequently, ROL was selected for evaluating various conditions on the effect of 1, 3-dilinolein yield, which including reaction time {1~9 h), reaction temperature (25-60℃), enzyme loading (12-128 U/g of oil), wa-ter addition (28%~80%WT of total reaction system), stirring method and mixing speed (50-900 r/min). The optimal conditions were obtained and shown as follow: reaction temperature 30℃, enzyme loading 64 U/g, water content 28.57%, reaction time 4 h. Under these conditions, the yield of 1, 3-dilinolein was 23.91%, and the total content of diacyl-glycerol was about 55.5%.关键词
