乳糖酶水解生产低乳糖牛乳工艺的优化
Optimization on technology of Low lactose milk production hydrolyzed by lactose enzyme

Abstract
Optimization of milk hydrolysis conditions was carried out through mono-factor and orthogonal experiments. The results showed that: the optimal hydrolysis conditions of lactase was 40℃, enzyme dosage 2 500 U/L, time 2 h,and the hydrolysis rate achieves almost 74.5%.关键词
