摘要

Abstract

The purpose of this paper was to investigate the effect of Acanthopanax trifoliatus Tea bud extraction to scavenging nitrite and inhibiting the formation of N-nitrosodimethylamin(NDMA) in vitro.The active substance from Acanthopanax trifoliatus Tea was extracted through different solvents such as distilled water,50% ethanol and 50% methanol.The optimum extraction conditions were obtained by L9 (34) orthogonal test:the ratio (g∶mL)of solid to solution was 1∶25,the extraction was proceeded for 2h used refluxing.Under those conditions,the maximum capacity of scavenging effect to sodium nitrite was 75.04%,the maximum capacity of inhibition the N-dimethyl nitrosamine was 88.65%.And the inhibition capability of extract to nitrosamine ethylamine and scavenging sodium nitrite capability was compared.
