冻融甘薯热风干燥特性与动力学研究
Hot air drying characteristics and dynamics for freeze-thaw sweet potato

Abstract
The objective of this study was to investigate effects of freeze-thaw processing on hot air drying characteristics of sweet potato.Drying characteristics were compared in different times of freezethaw and in different hot air drying temperature.The drying kinetics models of freeze-thaw sweet potato were founded.Results showed that freeze-thaw pre-treatments had important effects on drying characteristics.It was found that freeze-thaw pre-treatments could significantly decrease the drying time and increasing the drying rate.Page model provided better simulation of drying curves for freeze-thaw sweet potato at different drying conditions.Fitting undetermined coefficients k and n of Page model were cubic with the times of freezethaw,with R2 value of 1.This research can provide a theoretical basis for the control of hot air drying process of freeze-thaw sweet potato.关键词
