摘要
Abstract
The high content microencapsulation of β-catotene preparedby high temperature meltingand spray drying method with octenyl succinic anhydride starch (OSAS) as wall materials,stearoyl lactylate (SSL) as the emulsifier,dl-α-tocopherol asanti-oxidants.The β-carotene microcapsule optimal formulais optimized using single factor and mixture experimental designwith microcapsule embedded rate astarget.The results show that the optimal formula of the β-catotenemicrocapsule is wall materials 62％,sunflower seed oil 21％,and SSL 2％.The high quality microencapsulation of β-catotene products is obtained under optimal conditionswith good embedding rate,liquidity and solubility.关键词
