不同羊种及部位对脂肪源挥发性物质组成的影响
Effects of Lamb Species and Adipose Location on Volatile Characterization

Abstract
Solid-phase microextraction technique and gas chromatography-mass spectrometry technique were used to extract and analyze the volatile compounds of the perirenal and caudal subcutaneous adipose tissues of Hu sheep,goat and wether.To investigate the effects of different species and adipose's location on volatile substances,principle component analysis,cluster analysis and ANOVA were used to analyze the data.The results showed that Aldehydeswere the main components of Subcutaneous fat,while Alcohols and Hydrocarbons were the main components of Perinephrit fat.(E)-2-Nonenal,(E)-2-Octenal,(E)-2-Decenal,Nonanal,Heptanal,Octanal and 2-Undecanone were found as the main volatiles,which were higher in subcutaneous adipose tissue of Hu sheep than in that of goat.No matter Hu sheep or goat,the levels of these volatiles were different between perirenal and subcutaneous adipose tissues.Castration had no effect on volatile content level in both adipose tissues.关键词
