摘要

Abstract

The technological conditions of alkali extraction of starch from malt were discussed in this paper by studying the influence of stirring time,the ratio of solid to liquid and pH on the extraction rate.The results of experiments showed that:under the optimum conditions that stirring time of 3h,the ratio of solid to liquid of 1 ∶4,pH of12,the extraction ratio of starch was 87.12%.
