Abstract
Objective:To study the application and influencing factors on the content of free calcium in beverage of calcium ion selective electrode method.Method:The calibration curves for the electrode were ob-tained by determining the potential values of different concentrations of calcium ion solution prepared.Apply-ing this method the contents of free calcium in several kinds of beverages,milk powder and whey protein were determined.In addition,the recovery of free calcium in beverage,the effect of centrifugation on the content of free calcium and the recovery as well as the effects of pH,phosphate or citrate and polysaccharides on the free calcium content in beverages were discussed.Result:The linear correlation between the potential value and the concentration was higher with more than 0.99 of the correlation coefficient and the recovery of 98.4%~100.5%when applied to determine in the Ca2+solution,which could be used to determine the content of free calcium in different concentrations from lower to higher.The centrifugation didn’t affect the determination of free calcium content and due to the presence of chelating agents and fatty acids the recovery was significantly lower in beverage.Moreover,pH,different salts and their concentration and different polysaccharides signifi-cantly affected the content of free calcium in beverage.Conclusion:Calcium ion selective electrode method could be used to determine the content of free calcium in beverages and powders like milk powder and study the varied influencing factors which effect on the free calcium in beverage.关键词
