《救荒简易书》是晚清时期的重要救荒类农书，全书吸收了中国传统农业科技和西方相关科技知识，以河南地区为中心介绍了多种实用农业技术减灾措施：引进推广多种外来新作物品种，挖掘本土救荒作物的价值，对种植这些作物的轮作倒茬技术也有提及；从盐碱地、虫草地改良与有机肥的施用三方面记载了改良土地以抗御灾害的方法；井水取用上则涉及凿井取水、旺水和净化技术。该书可谓中国古代救荒类农书的集大成者与创新典范。
