壳聚糖是一种天然、可降解,并且可再生的碱性多糖,其作为一种新型无毒无害的天然食品保鲜剂,被广泛应用在食品工业领域。本文介绍了壳聚糖的保鲜机制,并综述了其保鲜作用在猪肉制品、牛肉制品、家禽肉制品以及水产品中的应用,最后探讨了壳聚糖在肉制品保鲜方面存在的问题,并对壳聚糖的研究前景进行了展望。

Chitosan is a basic natural, biodegradable and renewable polysaccharide, and it also a natural and non-toxic food preservative, which is widely used in the food industry. The preservative mechanism of chitosan is reviewed as well as its application in pork products, beef products, poultry products and aquatic products.
