Abstract

The aroma compounds of Daqu were analyzed by headspace-solid-phase microextraction(HS-SPME) combined with gas chromatography-olfactometry-mass spectrometry(GC-O-MS).At the same time,the conditions of fiber type,adsorption time,extraction temperature and sample amount for analysis of volatile compounds in Daqu samples were optimized.The conditions of SPME were optimized by single factor experiment,such as fiber type,adsorption time,extraction temperature and sample amount.The optimum extraction conditions were 1.5 g sample,50/30 μm DVB/CAR/PDMS fiber,extraction time 30 rain and extraction temperature 50 ℃.With the potimal conditons,69 volatile compounds were identified from the tested Daqu sample,including 9 alcohols,13 esters,8 aldehydes,4 ketones,3 acids,9 pyrazines,8 aromatic compounds,5 phenols,2 heterocyclic,3 alkanes and 5 others.17 aroma-active compounds were detected by GC-O-MS,14 compounds were identified.The key aroma-active compounds were 2-ethyl-3,5-dimethyl pyrazine and phenylacetaldehyde.Their odor activity values (OAVs)and their aroma intensities were stronger than others.They contribute honey-like,baked potato-like,and the all aroma-active compounds constitute the unique aroma of Daqu.
